Watershed Sentinel review:
"THE SALMON RECIPES is not so much a cookbook, although it is an
excellent one, as a luscious visual and mental experience. Combining
stunningly beautiful photography, a few Susan Musgrave poems, First
Nations' reminiscences of harvesting and other experiences of the sea,
and wonderfully practical recipes, this is not just Cookbook of the
Season, but deserves a BC book award. "
The Salmon Recipes is a visual feast of the culinary practices of the people of British Columbia's North Coast, packaged into a stunning photographic essay that displays both our traditional and modern artisanal food skills.
This historic book includes a first-ever published collection of North Coast culinary delights-- ranging from rare, traditional salmon preparation techniques to avant-garde seafood experiments with subtle flavours, complete with step-by-step instructions to help guide cooks of all levels.
In between these covers you'll discover a collection of delicious food photography, side-by-side with a breathtaking photographic experience of our land that offers a unique insight into the culture, the wildlife and the rich ecosystems of the North Coast. And you will find that our land lives, breathes and tastes like salmon.
This book has brought together a diverse group of the people of the North Coast, to reach out in celebration of our struggle to protect what we value most. Some of us-- like Robert Davidson and Susan Musgrave-- are gifted story tellers. All of us have volunteered our recipes and our poems. We share the stories of our life on the coast and our intimate co-existence with its ecosystem. Along with our fears for our future.
The Salmon Recipes are the recipes of our grandmothers. They are the recipes for living rightfully on our land today. And these are the recipes for passing our culture, our cuisine and our way of life down to our children. But most importantly-- this book is the best recipe we have for stopping a coalition of government and big oil interests with plans for destroying our land.
This book came together over our concerns about a proposed oil tanker port invading our North Coast fiords and our historic salmon spawning waters, where the salmon return each year to renew the land and its people. When you embrace this spirit of renewal through our eyes, you will not only discover a vision of an amazingly rich cuisine-- you’ll come to understand and embrace the complex ecosystems of our land and its importance to our nation’s food security.
And together, we can share a vision that will protect the bounty of our land and its great circle of life.
